Comfort Food

Hi again! Is it cold/cool where you are?  Our 'fall' is 80* today, maybe in the 70's soon - t-shirt and yoga pants attire.  We did have a few cooler days last week, but it has since warmed up.  Currently, I'm sick with a sinus infection/bronchitis ( whomp, whomp ) so my appetite is not great, but it's times like these that I just really want some comfort food.  I'm not normally a huge fan of soup, but my throat was just begging me for some good ole chicken noodle.  We really love this recipe ( well, the baby isn't so sure about it ), so I thought I would share it!  It's yummy and easy ( thank you, crockpot! ).  I serve it with sweet yellow cornbread :) Slow Cooker Chicken Noodle Soup Ingredients 2 Boneless, skinless chicken breasts, halved 5 Carrots, peeled and sliced (I use frozen, pre-chopped) 5 Celery stalks, sliced (I use about 4) 1 Onion, chopped (I use frozen, pre-chopped) 2 ...

I have a confession:  I don't get around to cooking a lot these days.  With a full time job and a 45-60 minute commute, by the time I get home from being on my feet all day I don't generally want to stand around and make dinner.   My bad.   I am ( maybe) getting somewhat better as of late. My good friend, Natalie, just had her baby.  ( She's the one we threw the Peter Rabbit  baby shower  for recently. )  Anyway, I wanted to bring them dinner.  I generally like to make lasagna for several reasons:  It's so good homemade!  It's easy to make in a large portion which is good for extra family members or leftovers.  It's universally liked - well, it should be anyway.  Who doesn't love lasagna?  ( My mom, that's who - but she's allergic to cheese - so that's a whole different story. )  As it turns out, someone had already brought Nat and Seth lasagna, so I had to think of something else that would be good ...
